SPRINGFIELD, Ill. — It’s Illinois State Fair time, which means competition, funnel cakes and beef.

Stop by the Illinois Beef Association’s Ribeye Corral for some tasty beef products at this year’s fair. The IBA will be serving the popular items such as the ribeye sandwich and hamburgers, both featuring a few enhancements.

In addition, the group is excited to introduce some new products such as the crunchy taco cup and Irish nachos. The crunchy taco cup is a beef taco salad in a cup — portable and healthy. The Irish nachos will feature the same tasty taco beef on a bed of waffle fries with cheese.

The Ribeye Corral also will be a place to relax and keep the kids entertained with a coloring station and new beef photo backdrop for fun beef mementoes.

Wednesday, Aug. 14, is Lean Beef Day at the Illinois State Fair. Don’t miss the chance to see the special Lean Beef Culinary Contest at the Hobby, Arts and Crafts Building. The competition begins at 9 a.m. with an IBA cooking demonstration to follow at 3:15 p.m. and beef trivia at 5:15 p.m.

The Illinois State Fair is the kickoff event for the Illinois Junior Beef Association. IJBA members can join fellow beef producers for an ice cream social Wednesday, Aug. 7, in the junior building show ring, following junior show check-in, to learn more about IJBA activities and to elect the IJBA Board of Directors.

IJBA members also are encouraged to enter the IJBA Jackpot Show Sunday, Aug. 11, two hours after the Open Steer Show. The show is for heifers only with a $25 entry fee. Participants can enter during the junior show check-in at the Illinois State Fair.
